*ANNOUNCEMENT* CLOSED FOR THE 2025

With the heaviest of hearts.....

It is with the heaviest of hearts that we announce Mac’s Wood Fired BBQ will be closing for the 2025 season. This decision comes after a multitude of reasons that makes it heartbreakingly difficult but very necessary. Sudden circumstances out of our control have forced us to take a step back and reevaluate how we operate if we want to have a future serving up our wood-fired BBQ.


We sacrifice a lot and pour our hearts and lives into this business, and we have to make sure we are doing it at the right time and in a way that makes sense for us to continue. While this isn’t goodbye forever, it is a pause that we need to take for now.


To all of our incredible customers and supporters—you have no idea what you mean to us. Your love for our BBQ has fueled us through long days and sleepless nights, and we can’t thank you enough for being part of this journey. We hope to be back, stronger and better, when the time is right.

We are more than just a food truck. We offer premium selected meats cooked low and slow only using oak wood, live fire, and smoke. Infusing rustic and primal flavors in to your food by our skilled pitmaster and chef using locally sourced fresh ingredients. We bring great food to locations all over Northeast CT and surrounding areas. Our calendar below shows our scheduled stops, but be sure to follow our social media for surprise visits! 

About Us

Mac's Wood Fired BBQ is woman-owned and founded in 2020 by husband and wife Sean and Kimberly MacVarish. Appropriately nicknamed the "Mac's" is where the name of our brand was born.


Prior to getting together, Kimberly always had dreamed of having her own food truck to have the independence and creative freedom to serve made from scratch comfort foods that she learned to make alongside her grandma's and father, Mike, whom have taught her her culinary skills at a very young age and ignited that spark of inspiration and love of cooking for others. She worked in various aspects of the food industry including serving, bartending, and catering to pay her way through college where she studied and received a degree in dental hygiene. She worked in the dental field for 15 years but always had the gnawing vision of owning a food truck that she just couldn't shake off.


Meanwhile, Sean's inspiration and skills came from when he was a teenager. When his family had bought his father a smoker for Father's Day and Sean began experimenting with different smoked recipes and techniques for fun. He has been working on his craft for over 15 years using different methods of smoking meats and the perfected recipe is as simple as it gets, a true labor of love.


Fast forward to when Kimberly and Sean began dating in 2015, and during a silly conversation about "if you could do anything what would you do with your life?" question popped up, and that's when our two passions collided and the opportunity to blend both of our dreams into a realistic vision came to life. 


In 2020, Sean and Kimberly decided to cancel their big wedding they had planned, eloped on their small hobby organic farm, and then used the money they had saved for the wedding and honeymoon to start their business and buy their first little smoker trailer and then the food truck that had all the basics to get started. As the few short years have progressed, we have quickly expanded to our 3rd smoker and plan to upgrade again soon to keep up with all of your requests! At this time, we do not have a brick and mortar restaurant, we  are out with our food truck seasonally during the Spring to Fall months and also offer private catering. The Meats

Smoked Brisket

Smoked for 18 hours until a perfect mahogany bark is made. Cut to order to ensure a flavorful juicy bite every time.

Chucky's Burnt Ends

Chuck roasts are smoked whole to create that distinctive dark bark and tender consistency. Cubed and slathered in our  Kansas City Sweet & Smoky Sauce then thrown back into the smoker to create a perfectly coated delcious morsel of beef.

Maple Pork Belly Bites/Skewers *SPECIAL *

Smoked to perfection and coated in locally sourced maple syrup.

Smoked Pulled Pork

Smoked for 14 hours, hand shredded fresh to order highlighting that juicy wonderful natural pork flavor.

Smoked Pulled Chicken

Smoked until tender and juicy and kissed with a hint of smoke.

Smoked Salmon with a Hot Honey Glaze *SPECIAL*

Fresh wild caught & never frozen filet of salmon is brined overnight with salt and brown sugar. Then cold smoked to create a clean fresh smoke flavor then drizzled with a hot honey glaze *Occasional food truck special and offered on our catering menu.

Texas Twinkies

Jumbo jalapenos stuffed with smoked cream cheese, smoked brisket, and then wrapped in bacon and smoked until crispy.


The Sides

Catch these side dishes on our food truck! We also offer an extensive variety of sides on our catering menu.

Salt Crusted Fingerling Potatoes

Boiled in a salty brine making a crispy and salty crust with a smooth creamy inside. Drizzled with melted butter.

TexMex Street Corn

Fire roasted corn off the cob in our creamy elote sauce. Topped with queso fresco, house made pickled red onions, and lime zest.

Pork & Pit Beans

Fully loaded with pulled pork and slow simmered for hours in our Kansas City Sweet & Smoky Sauce.

Yankee Buttermilk Cornbread

Thick, fluffy, and served warm.

Our Creamy Coleslaw

Green & red cabbage and carrots all shredded fresh and then tossed in our secret signature coleslaw sauce. A perfect compliment to refresh your palate between your bites of rich delicious BBQ.

Mac's Mac & Cheese

Cavatappi pasta mixed with smoked gouda, smoked gruyere, Cabot sharp white cheddar, and a triple mild cheddar blend of cheeses topped with a cheesy bread crumb crust, and baked until bubbly with a golden brown crust.

Assorted charcuterie style meats and cheeses, vegetables, fruits, crackers, dips, and baguettes. Customized quotes available based upon number of guests and chosen items. 

Alcohol Packages and Bartending Services

 

We are fully licensed and insured to offer your guests a one of a kind experience. Whether you want to keep it simple with beer and wine or want a totally personalized experience with signature craft cocktails, we will create the perfect menu for your event. We provide everything you need for your event - drink ware, mixers, garnishes, and more! Mac’s does not provide the alcohol for your event, we serve the alcohol that has been provided by the party’s host. Our bartenders are fast, friendly, and professional and we set the perfect mood for a memorable experience. Your guest count, the length of your event and what you choose to serve will determine how many bartenders are needed for your event. Once you book, we will finalize cocktails and menus and send you a recommended shopping list for alcohol!
